It has a bit of a kick thanks to the red pepper but that can be easily adjusted to taste. I think they enjoy the toppings bar the most. The shredded coconut, raisins and banana chips sweeten the deal and it generally makes enough for leftovers. In fact, I always find it tastes a bit better the next day!

As the holidays approach, we look forward to the traditional foods that fill our tables and often spend hours upon hours getting all the dinner components together. But, what do you do for breakfast the next morning, with a houseful of extended family and no energy left to cook one more thing? Sausage strata! Prepared in just 15 minutes the night before, it can be popped in the oven when you wake up.

It’s a one-pot meal with vegetables and protein, easy to throw together and easy to clean up! This west African beef stew has a great medley of flavors from the sweet potato and plantains to the vinegary mustard seeds. The variety of textures makes each bite interesting, too. Enjoy!
